  • About 4 cups fresh dandelion flower heads (about 500 flowers), washed
  • 2 quarts water
  • 2 lemons, cut into 8 pieces each
  • 2 oranges, cut into 8 pieces each
  • 4 1/2 cups granulated sugar (about 2 lbs)

Preparation:

  1. Place the washed dandelion flowers, lemon pieces, and orange pieces in a large pot with 2 quarts of water.
  2. Bring to a boil and simmer for 30 minutes.
  3. Strain the mixture through a fine sieve or cheesecloth, pressing to extract all liquid.
  4. Return the strained liquid to the pot, add 4 1/2 cups of sugar.
  5. Cook again over low heat for about 2 to 2.5 hours, stirring constantly, until the mixture thickens into a syrup.
