Do you love crepes? Soft, fluffy, and easy to make, these crepes are perfect for breakfast, dessert, or a sweet snack. Fill them with plum jam or any topping you like and enjoy!

Ingredients (makes about 6 crepes)

  • 1 large egg
  • ¾ cup milk (6 fl oz)
  • 1 cup water (8 fl oz)
  • 1 2/3 cups all-purpose flour (7 oz)
  • Pinch of salt
  • ¼ teaspoon baking soda
  • 2 tablespoons vegetable oil
  • Additional oil for greasing the pan
  • ¼–½ cup plum jam (for filling)

Instructions

In a medium bowl, whisk together the egg, milk, and water. Stir in the flour, salt, and baking soda until the batter is smooth and free of lumps. Mix in the 2 tablespoons of vegetable oil. Preheat a nonstick skillet over high heat, then reduce to medium-high (about 7 out of 9) and lightly brush with oil. Pour a small amount of batter into the pan, swirling to cover the bottom evenly. Cook until bubbles form on the surface, then flip and cook the other side until golden. Stack cooked crepes on a plate and cover with a lid or foil to keep them soft and warm. Spread a spoonful of plum jam on each crepe before serving, or try other sweet or savory fillings if desired.

These crepes are perfect with fresh fruit, powdered sugar, honey, or simply enjoyed on their own. They stay tender even if stored covered for later.
