Famous Sachertorte! The Best Recipe for the Chocolate Queen

Ingredients:

¾ cup sugar

1 packet vanilla sugar

1 cup (2 sticks) butter, softened

6 large eggs

5 oz cooking chocolate (about ½ cup)

A pinch of salt

½ cup powdered sugar

1 ¼ cups all-purpose flour

1 teaspoon baking powder

For the glaze:

7 oz cooking chocolate (about ½ cup)

4 tablespoons butter

For the jam:

7 oz fruit jam (apricot preferred)

Instructions:

Prepare the batter: Beat the sugar, vanilla sugar, and softened butter until fluffy. Add the egg yolks and mix well. Melt the chocolate over a double boiler, then gently stir it into the yolk and sugar mixture.

Whip the egg whites: Whip the egg whites with a pinch of salt until stiff peaks form. Add the powdered sugar and continue whipping for another few minutes.

Combine ingredients: Fold one-third of the whipped egg whites into the chocolate mixture. In a separate bowl, combine the remaining egg whites with the flour and baking powder, then gently mix into the chocolate batter.

Bake the cake: Grease a round cake pan and pour the batter in. Bake in a preheated oven at 350°F for about 45 minutes. Let the cake cool completely.

Glaze the cake: Spread the fruit jam (apricot works best) evenly over the cooled cake. Then, prepare the glaze by melting the chocolate and butter together, then pour it over the cake, spreading it evenly to cover.
