As the days grow cooler, there’s nothing more comforting than a warm, hearty pumpkin stew. This Cozy Autumn Pumpkin Stew is a perfect blend of tender pumpkin and potatoes, seasoned with aromatic spices like curry and ginger. It’s simple to prepare and brings the flavors of fall right to your table.
Ingredients
- 3.3 lbs pumpkin, peeled and chopped
- 2 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 1 ½ teaspoons curry powder
- 1 teaspoon ground ginger
- 1 tablespoon vegetable oil
- 1 ½ teaspoons salt (adjust to taste)
- 6 cups water (or more for desired consistency)
Preparation:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it softens and becomes translucent, about 3-4 minutes.
- Add the chopped pumpkin and potatoes to the pot and stir to combine. Pour in 6 cups of water, or just enough to cover the vegetables. Bring to a boil.
- Lower the heat and let the mixture simmer until the pumpkin and potatoes are soft, about 25-30 minutes.
- Once the vegetables are tender, use a potato masher or hand blender to mash the mixture to your desired consistency. If it’s too thick, add more water gradually to achieve a smoother, stew-like texture.
- Stir in the curry powder, ground ginger, and salt, and allow the stew to simmer for an additional 5-10 minutes so the flavors can meld together.
- Taste and adjust the seasoning if needed. Serve hot with a garnish of fresh herbs or a swirl of cream.
