Buttery, crunchy cookies with a hint of hazelnut flavor. perfect for a snack, tea time, or a small dessert.
Ingredients:
5 tablespoons unsalted butter, softened
1 teaspoon margarine
1 large egg white
1 large egg yolk (for brushing)
1 teaspoon active dry yeast
1 ½ cups all-purpose flour
¼ cup granulated sugar
¾ cup crushed hazelnuts
Instructions:
Preheat oven to 350°f (175°c). lightly grease a baking sheet.
In a large bowl, mix butter, margarine, egg white, yeast, sugar, flour, and crushed hazelnuts until a firm dough forms.
Roll the dough out on a floured surface to about ¼-inch thick.
Cut disks using a small glass or cookie cutter. Place them on the prepared baking sheet.
Crush the tops with egg yolk for a golden finish. optionally, sprinkle with extra hazelnut pieces.
Bake for 12–15 minutes, or until golden brown. cool slightly before serving.
