Chicken “Mediterrano” ingredients:
500 grams of chicken meat,
2-3 large potatoes,
1 large zucchini,
300 milliliters of cooked tomatoes,
200 grams of cow’s cheese,
1 onion,
2 cloves of garlic,
basil,
oregano,
black olives,
salt,
pepper.
Preparation:
Oil the baking dish, then arrange the boiled potatoes, previously cut into rings, on the bottom. Cut the chicken into steaks, pound with a pestle, season and arrange on top of the potatoes. Add zucchini, also cut into rings, on top. In a pan on the stove, fry the onion and garlic, then add the cooked tomato (and a little water if the tomato is too thick), and simmer everything together until it boils.
Season the tomatoes with basil, oregano and a little pepper. Remove from heat, cool, then add crumbled cow’s cheese to the pot. Pour the mass into a dish with chicken and vegetables, put a couple of black olives on top, cover with aluminum foil and bake. Serve with wine as desired.
