Baked Fish Stew, a savory dish popular in many homes, offers a perfect balance of flavors with its combination of fish, rice, and vegetables.

Ingredients:

  • 1 kg of cleaned fish fillets (or any other fish of your choice)
  • 500 g of chopped onions
  • 500 g of assorted vegetables for stew or frozen mixed vegetables
  • 1 cup of rice
  • 1 can of crushed tomatoes
  • 2 dl of olive oil
  • Salt, pepper, paprika

Preparation: Clean and slice the onions into thin strips. Heat a pan, add the olive oil, and sauté the onions until they’re half-cooked. Add the rice to the onions and cook until the rice turns translucent, stirring constantly at medium heat. Add the mixed vegetables, stir, and cook for a few more minutes. Pour in the crushed tomatoes, season with salt, pepper, and paprika to taste, then mix well. Cut the cleaned fish into large chunks and add to the pan, gently stirring to coat with the mixture. Cover the dish with a lid or aluminum foil and bake in a preheated oven at 180°C for 45 minutes. Afterward, remove the foil or lid and bake a little longer to form a crispy top. The stew should not be too dry or too watery. If it’s dry, add some hot water and stir gently. If it’s too liquid, continue baking until the excess liquid evaporates.
