Ingredients
Cake Layers (Make 3 Layers)
For each layer:
- 5 egg whites
- 10 tablespoons granulated sugar
- 5 tablespoons finely chopped walnuts
- 2 tablespoons ground walnuts
- 1 tablespoon fresh lemon juice
Filling
Part 1
- ¾ cup whole milk
- About 3 cups ground walnuts
- 3½ ounces dark chocolate, melted
Part 2
- 15 egg yolks
- 15 tablespoons granulated sugar
- 1½ cups unsalted butter, softened
Part 3
- 3 ripe bananas, mashed
- 1 tablespoon fresh lemon juice
Topping
- 2 to 3 cups prepared whipped topping or freshly whipped heavy cream
Instructions
Preheat the oven to 350°F.
For each layer, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff and glossy. Fold in the chopped walnuts, ground walnuts, and lemon juice.
Spread the batter evenly into a prepared cake pan and bake for about 15–18 minutes, or until lightly golden. Repeat the process to make a total of three layers. Allow them to cool completely.
Heat the milk until hot but not boiling. Pour it over the ground walnuts and stir well. Add the melted chocolate and mix until smooth. Let cool.
In a heatproof bowl set over simmering water, whisk the egg yolks and sugar until the mixture becomes thick and pale. Remove from the heat and allow it to cool completely.
Beat the softened butter until creamy, then gradually mix it into the cooled egg yolk mixture.
Mash the bananas and stir in the lemon juice.
Combine the walnut-chocolate mixture, the egg yolk-butter mixture, and the mashed bananas until smooth and evenly blended.
Place the first cake layer on a serving plate.
Spread a generous layer of filling over the cake, then add a layer of whipped topping.
Repeat with the remaining cake layers, filling, and whipped topping.
Finish by covering the top and sides with the remaining whipped topping. Refrigerate for several hours, or overnight, before serving for the best flavor and texture.
