Due to the vegetarian way of eating, champignons and other mushrooms are quite represented in my menu. Here are a couple of recipes that I prepare most often, and you can put whatever mushrooms you want..
Vegetarian mushroom recipes – Mushroom risotto recipe
Ingredients: 350 grams of rice, a liter of water, a tablespoon of vegetables, 50 grams of butter, 300 grams of mushrooms, half an onion, 8 tablespoons of oil, 100 grams of Parmesan cheese, white wine.
Preparation: Fry chopped onion and mushrooms cut into leaves in oil. Pour wine over them and let the wine evaporate. After that, add the rice that you previously cooked in the water with the vegetables. Mix gently, add butter and parmesan cheese.
Vegetarian mushroom recipes – Creamy Mushroom Pasta
Ingredients: 200 grams of any pasta, 250 grams of mushrooms, half a deciliter of cooking sour cream, butter, pepper, 10 capers, thyme, parsley, a teaspoon of dry spices, a spoonful of starch flour.
Preparation: Melt butter in a pan, add sliced mushrooms. After you have sifted them, put a spoonful of starch flour, mix and add cooking cream, one teaspoon of dry spices, capers, pepper, thyme and parsley. Cook on low heat for about five minutes and serve with the pasta you have cooked.
Vegetarian mushroom recipes -Mushroom baked eggs
Ingredients: 150 grams of mushrooms, 8 hard-boiled eggs, onion, 3 dcl of sour cream, 100 grams of grated Trappist cheese, a tablespoon of flour, 2 dcl of milk, 2 tablespoons of crumbs, parsley leaf, oil, vegetables, pepper, salt.
Preparation: Clean the champignons carefully, wipe them with a paper towel and cut them into thin slices. Fry the chopped onion in the oil, add the sliced mushrooms, then saute together until the mushrooms soften and the liquid released during the sauteing evaporates. Sprinkle them with flour, cover with cold milk, add chopped parsley, salt, pepper, sprinkle with vegetables and let it boil. Then remove the pan from the heat. At the bottom of a suitable baking dish that you previously greased, place half of the amount on the slices of sliced eggs, pour the prepared mushrooms in the sauce over them, sprinkle with crumbs fried in oil, and arrange the other half of the sliced eggs on top of them. Pour sour cream over everything, sprinkle with grated trapista and bake in the oven for about 15 minutes.
