There is something quietly powerful about small desserts. They don’t demand attention the way a towering cake does, yet they linger longer in memory. These red velvet mini cakes, dipped in white chocolate, are made for Valentine’s Day moments that feel personal — a shared plate, a slow conversation, a sweet pause in the evening. Soft, rich, and delicately coated, they read less like a recipe and more like a gesture.

Ingredients (Serves about 10)

For the Red Velvet Cake

  • 2 cups all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 cup plain yogurt or whole milk

For the Cream Filling

  • 5 oz cream cheese, softened
  • 5 oz mascarpone cheese
  • ¾ cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

For the White Chocolate Coating

  • 10 oz white chocolate, chopped
  • 2 tablespoons neutral oil (vegetable or sunflower oil)
  • Decorative Valentine sprinkles (optional)

Instructions

Preheat the oven to 350°F. Line a rectangular baking pan with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, and salt.

In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the red food coloring.

Add the dry ingredients in stages, alternating with the yogurt or milk, mixing gently until smooth. In a small cup, mix the baking soda with a few drops of vinegar, then fold it into the batter.

Spread the batter evenly in the prepared pan. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely, then cut into even strips or cubes.

For the filling, beat the cream cheese and mascarpone with powdered sugar until smooth. Slowly add the heavy cream and vanilla extract, mixing until thick and creamy.

Assemble the cake layers with the cream filling, then chill for 1 hour. Cut into small, neat cubes.

Melt the white chocolate gently with the oil until smooth. Dip each mini cake into the chocolate, letting excess drip off. Place on parchment paper and decorate if desired. Allow the coating to set completely.
