This fresh Italian-style tomato sauce captures the essence of summer-ripe tomatoes, aromatic herbs, and a hint of garlic. Perfect for pasta, grilled vegetables, or as a base for pizza, it’s a recipe that feels both rustic and refined, made in minutes but full of flavor.

Ingredients (Makes about 3 cups)

  • 2 tablespoons extra-virgin olive oil
  • 2 medium shallots, finely chopped
  • 2 cloves garlic, minced
  • 28 oz (about 800 g) crushed tomatoes or 2 cups fresh diced tomatoes
  • ¼ teaspoon red pepper flakes (optional, for mild heat)
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh oregano or parsley
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon capers (optional, for a briny accent)

Instructions

Heat olive oil in a medium saucepan over medium heat. Add shallots and garlic and cook until softened and fragrant, about 2–3 minutes.

Stir in crushed or diced tomatoes and red pepper flakes. Bring to a gentle simmer.

Reduce heat to low and cook for 20 minutes, stirring occasionally, until the sauce thickens slightly.

Stir in fresh basil, oregano (or parsley), salt, and pepper. If using capers, add them now. Simmer for an additional 10 minutes to let the flavors meld.

Taste and adjust seasoning if needed. Serve immediately over pasta, vegetables, or use as a base for pizza or lasagna.
