Zucchini schnitzels are a perfect way to enjoy fresh summer veggies in a crispy, flavorful form. Light, easy to make, and satisfying, these schnitzels work great as a snack, appetizer, or even a main dish paired with a salad or dip. Here’s how to make them:
Ingredients:
- 2 medium zucchinis
- Salt, to taste
- 1/2 cup chopped onion
- 2 large eggs (or 1 egg for smaller portions)
- 1/2 cup flour or breadcrumbs (adjust as needed)
- Cooking oil, for frying
Instructions:
- Grate the zucchinis using a coarse grater. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.
- After resting, squeeze out as much liquid as possible from the grated zucchini using your hands or a clean kitchen towel.
- In a bowl, combine the drained zucchini with chopped onion, eggs, and enough flour or breadcrumbs to form a batter that’s thick but still scoopable.
- Heat cooking oil in a skillet over medium-high heat. Drop spoonfuls of batter into the hot oil and flatten slightly.
- Fry for 3-4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
- Serve warm with your favorite dips or salad.
