Ingredients
14 oz butter cookies (such as tea biscuits or graham crackers)
1 cup chopped walnuts
3.5 oz (100 g) dark cooking chocolate, chopped or grated
4 packets instant pudding mix (vanilla or chocolate), about 1.4 oz each
4 cups whole milk
1 cup (2 sticks) margarine or unsalted butter
2 packets whipped topping (or 2 cups prepared whipped cream)
12 tablespoons sugar
Instructions
- In a small bowl, mix the pudding powder with 2–3 tablespoons of sugar (per packet).
- From the 4 cups of cold milk, set aside about 6 tablespoons. Mix these with the pudding powder and sugar to make a smooth paste.
- Heat the remaining milk in a pot until it starts to boil. Remove from heat and stir in the pudding mixture. Return to heat and cook, stirring constantly, for 1–2 minutes until thickened.
- While still warm, add margarine or butter to the pudding and mix until smooth and creamy.
- Stir in crushed cookies, chopped walnuts, and chocolate until evenly combined.
- Spread the mixture into a square or rectangular dish lined with parchment or lightly greased.
- Top with whipped cream and smooth it out.
- Refrigerate for several hours until set, then slice and serve.
