This classic cheesecake is the ultimate dessert for any gathering, big or small. With its smooth, velvety texture and golden, buttery crust, it strikes the perfect balance between rich and light. A fruit topping adds a fresh, tangy contrast that elevates every bite. Though it takes some time to bake and chill, the process is simple and yields a perfect result every time. Top it with strawberries, blueberries, or any seasonal fruit for a show-stopping finish.
Ingredients:
Crust:
- 2 cups crushed graham crackers or biscuits (about 8.8 oz)
- 6 tablespoons butter, melted (about 2.8 oz)
- ½ teaspoon cinnamon
- 3 tablespoons honey
- 3 tablespoons orange juice (or water, if needed for moisture)
Filling:
- 2.2 lbs full-fat cream cheese
- 1 cup sugar
- 3 tablespoons all-purpose flour
- 5 eggs
- ⅓ cup heavy cream
Instructions
- Preheat oven to 350°F (180°C).
- Grease a 10-inch (26 cm) springform pan and set it on a baking sheet to catch any drips during baking.
- Make the crust: Combine melted butter, cinnamon, honey, and orange juice. Mix into crushed biscuits until evenly moistened. Press firmly into the bottom and about 1 inch up the sides of the pan. Chill while you make the filling.
- Prepare the filling: In a large bowl, stir the cream cheese with a wooden spoon until smooth. Add sugar and flour, and stir until well combined.
- Add the eggs one at a time, mixing just enough to incorporate each.
- Stir in the heavy cream until the mixture is smooth and uniform.
- Pour the filling into the crust. Place the pan (on the baking sheet) in the oven.
- Bake for 15 minutes at 350°F, then reduce the heat to 250°F (120°C) and continue baking for about 1½ hours, until the edges are set but the center still has a slight wobble.
- Carefully run a knife around the edge of the cake to prevent cracking as it cools.
- Let cool completely at room temperature, then cover with plastic wrap and refrigerate for at least 6 hours (overnight is best).
Fruit Topping (Optional)
Simmer strawberries (or any fruit) with a bit of sugar until soft and syrupy. Spoon over slices just before serving for a beautiful, tangy finish.
