I recently made a Sacher cake with the recipe that my neighbor uses to make it for her family.

Sacher Cake Ingredients:

  • 200 g butter
  • 200 g powdered sugar
  • 6 egg yolks
  • 150 g melted chocolate (melted over steam, add one spoonful at a time)
  • 150 g flour
  • 6 egg whites (whipped into stiff peaks)
  • Apricot jam (about 100 g)

For the Glaze:

Preparation:

  1. Whisk together 200 g of butter and 200 g of powdered sugar. Add 6 egg yolks, and gradually mix in 150 g of melted chocolate, spoon by spoon.
  2. Add 150 g of flour and gently fold in the stiffly beaten egg whites.
  3. Pour the batter into a greased and floured round cake pan (about 25 cm in diameter). Bake for about 40 minutes at 150°C (300°F).
  4. Once the cake is cooled, slice it in half. Gently warm about 100 g of apricot jam (preferably homemade for the best flavor) and spread it on one half of the cake.
  5. Place the second half of the cake on top, then cover the whole cake with the apricot jam.
  6. Melt 150 g of chocolate over steam and cover the entire cake with it. Once the chocolate has set, you can decorate the cake by writing “Sacher” on it, usually in edible gold paint for a nice touch.
  7. If you’re making it for yourself, simply enjoy the cake. If you’re gifting it, wrap it nicely in cellophane.
