Quick Pea Soup – fast and genuinely tasty.
Use half a bag of peas, one small or half of a larger leek, and one small broccoli (or half of a larger one). Place everything in hot water and add a tablespoon of seasoning. It will be cooked in about 30 minutes. Blend until smooth, adding more water if it’s too thick, along with some cooking cream to your taste, and a tablespoon of butter, and you’re done! If you don’t have broccoli, you can substitute it with cauliflower for a similar result.
Vegan Pea Stew
Ingredients:
- 1-1.5 kg peas
- 2 bunches of green onions or 4 regular onions
- 1 bunch of fresh dill
- 2 cups oil
- Salt, flour, seasoning, paprika
Instructions: Chop the onions (including the green tops if using green onions) and sauté with the peas in oil. Add seasonings and continue to cook, gradually adding water. When the peas soften, sprinkle with flour and add warm water, then mix in the dill and let it simmer until thickened. You can also bake it in the oven for a richer flavor.
Young Potatoes with Dill Sauce
Ingredients:
- 2 tablespoons oil
- 1 tablespoon whole wheat flour
- seasoning
- Salt
- 1 bunch fresh dill
- 1/2 liter water
- Juice of 1/2 lemon
Sauté the flour in oil, then gradually add water while stirring constantly to avoid lumps. Reduce the heat and bring to a boil. Add the seasonings and let it cook for about 10 minutes. Finish with lemon juice. Serve with new potatoes, peas, or similar side dishes.
