Protein bread is an excellent choice for anyone watching their diet—especially athletes, vegetarians, and those avoiding gluten. This recipe is perfect because it’s incredibly quick, doesn’t require any rising time, and you probably already have all the ingredients in your kitchen. In just a few minutes, you’ll have a soft, tasty, and nutrient-packed loaf.
Ingredients:
2 large eggs
1/2 cup Greek yogurt
1 cup rolled oats (gluten-free if needed)
1 teaspoon baking powder
A pinch of salt
Optional: seeds (pumpkin, sunflower, flax) and herbs (oregano, rosemary)
Instructions:
In a mixing bowl, whisk together the eggs and Greek yogurt until smooth and well combined.
Stir in the oats, baking powder, and salt. If you want, add your choice of seeds and herbs now.
Mix everything thoroughly. The batter will be thick—don’t worry, that’s exactly how it should be.
Pour the batter into a small loaf pan lined with parchment paper or lightly greased.
Smooth the top with a spoon.
Bake in a preheated oven at 350°F for about 20 to 25 minutes, or until the bread turns golden and feels firm when touched.
To check if it’s done, insert a toothpick in the center—if it comes out clean, your bread is ready.
