A timeless classic from French country kitchens, this cream soup celebrates humble ingredients — tender potatoes, sweet leeks, and fresh chives — transformed into a velvety dish perfect for any season. Easy to prepare and rich in flavor, it’s a soothing bowl of warmth that feels both rustic and refined.

French Parmentier Soup

(Serves 4)

Ingredients:

14 oz (400 g) white potatoes

3 leeks

2 carrots

1 bunch of chives

3.4 fl oz (100 ml) cooking cream

4 cups (1 quart) chicken broth

Salt and pepper to taste

Instructions:

Peel, wash, and slice the potatoes. Trim the leeks, cutting off the root ends and the green tops. Slice the leeks and wash them together with the chives.

Put the potatoes into cold water and bring to a boil. When boiling, add the leeks (reserve a few slices for garnish) and whole peeled carrots. Cook for about 20 minutes. Remove the carrots and slice them.

Mash the cooked potatoes, leeks, and soup with a blender or masher until creamy but not boiling. Stir in the cream and finely chopped chives, then mix again and divide into warmed bowls. Garnish with the carrot slices, reserved leek slices, and chives.
