Potato pancakes – ingredients:
7 eggs,
2 egg yolks,
1/2 kg of potatoes,
2 chives,
250 grams of smoked salmon,
3 cucumbers,
2 spoons of capers,
lemon,
3 spoons of flour,
1 spoon of density,
1 teaspoon of baking powder,
nutmeg,
oil.
Way of preparation
Cut the onion, salmon and cucumbers into cubes. Boil 2 eggs, peel them and grate them. Combine all ingredients, add capers, a little lemon juice, salt and pepper.
Peel the potatoes, cut them into small pieces and boil them in salted water until they are soft. Make a puree of potatoes, egg yolks, 5 whole eggs, flour and stock. Add baking powder, a little grated nutmeg, salt and pepper. Use this batter to bake pancakes until they get a nice golden color on both sides. Serve the pancakes together with the salmon sauce. Garnish with lemon wedges.
Potato Pie
Potato Pie ingredients: – 16 thin pie crusts – about 1 kg of peeled potatoes – oil – salt – pepper Grease the baking sheet with oil or margarine. Grate the potatoes in a large bowl, drain them well from the water, add salt and pepper. Arrange four crusts on top of each other and coat each one with a teaspoon of oil. Sprinkle the fourth crust with grated potatoes, wrap the crusts in noodles and coat them with a little more oil. Make 4 noodles. Bake for about 40 minutes on moderate heat, until the skins are golden brown. Note: This pie will be even tastier if grated and drained potatoes are combined with fried leeks, cut into thin rings.
