Roasted mushrooms glazed with balsamic sauce and garlic

If you’re wondering what to make for lunch or a quick dinner, oven-roasted mushrooms are a fantastic option. This simple meatless recipe is ready in about 20 minutes and delivers rich, savory flavor with very little effort. The mushrooms can be served as a main dish or as a tasty side, and you can use button mushrooms, cremini, or any variety you like.

Ingredients:

  • 2 lb fresh mushrooms (button or cremini)
  • 1 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine olive oil, balsamic vinegar, soy sauce, minced garlic, thyme, salt, and black pepper.
  3. Add the mushrooms and toss well so they are evenly coated with the marinade.
  4. Spread the mushrooms in a lightly oiled baking dish or sheet pan in a single layer.
  5. Roast in the oven for 18–20 minutes, stirring once halfway through, until the mushrooms are tender and slightly caramelized.
  6. Serve warm as a main meatless dish or as a flavorful side.
