Mushroom recipes –

Mushroom Chicken ingredients:

600 g of mushrooms,
300 g of chicken fillets (steaks, white meat),
300 g of smoked cheese,
4 eggs,
400 ml sour cream,
100 ml of olive oil,
medium head of onion,
dry parsley, celery, dill… oregano.

Grease the bottom of the baking bowl with olive oil and cover with mushroom caps (indentation from the stems upwards), and put a little sour cream in each indentation. “Sprinkle” with a mixture of spices and salt (to taste).
In the meantime, battered and salted chicken schnitzels – turn them over briefly on the grill (or in a dry pan), and chop the mushroom stalks and sauté them with onions.
Arrange the steaks on top of the mushrooms (again, add some herbs) and grate half of the prepared cheese. Cover all this with cheese, then eggs beaten with sour cream. Grate the rest of the cheese over everything and bake in the oven.

Mushrooms with vegetables
Ingredients: 400 g of mushrooms, 2 carrots, 2 medium-sized potatoes, 100 g of spinach, Swiss chard (or a mixture of nettles, buckthorn leaves and dandelion), 50 g of pickles, 100 ml of olive oil, juice of half a lemon, pepper and salt.
Preparation: Wash the carrots without excessive scraping, peel the potatoes, cut them into smaller pieces and expose them to steam for ten minutes. Do the same with leafy vegetables using steam for about 5 minutes or less. Clean the mushrooms, cut into thin slices and mix with the blanched vegetables. Add pickles, season with oil, salt and pepper, add lemon juice, mix.

Mushrooms in cream sauce
1/2 l of fresh mushrooms, 40 g of oil, 80 g of onion, 1 clove of garlic, 20 g of flour, 1 dcl of sour cream, parsley, pepper, salt. Fry the sliced onion in oil, add washed and sliced mushrooms, crushed garlic and a few spoons of water. Cover and simmer for 10 minutes. When the water evaporates, flour, fry and add more water or soup. After boiling, add sour cream, chopped parsley, salt and pepper. Let’s serve mashed potatoes with mushrooms in cream sauce.
