Meringues are light, airy, and sweet treats made with just a few simple ingredients: egg whites, sugar, and lemon juice. They’re perfect for any occasion and can be shaped into small kisses, discs, or decorative designs.
Ingredients:
- Egg whites
- Sugar
- Lemon juice
Preparation:
- Whip the egg whites until stiff, gradually adding sugar. Continue beating with a mixer on the highest speed for 25–30 minutes.
- After 25 minutes of mixing, add lemon juice and continue beating for another 5 minutes. Once the mixture is ready, transfer it to a piping bag.
- Line a baking tray with parchment paper, pipe the meringues, and bake as follows:
- Bake at 150°C (300°F) for 10 minutes.
- Lower the temperature to 120°C (250°F) and bake for another 8 minutes.
- Reduce the temperature to 100°C (210°F) and dry for an additional 8 minutes. Cover the meringues with parchment paper during the last stage of drying.
- Remove the finished meringues from the oven, let them cool, and serve.
Note:
For every egg white, use 5 tablespoons of sugar and 1 teaspoon of lemon juice. Optionally, add a little food coloring or finely chopped walnuts.
You can shape the meringues using two teaspoons: scoop the mixture with one spoon and scrape it off with the other. The same mixture can be used to form different shapes, such as discs, rings, or other decorative forms.
