Coffee Squares Ingredients:
- 4 egg whites
- 250 g sugar
- 1 heaping tablespoon of coffee
- 2.5 dcl (250 ml) sweet cream
- 2 tablespoons powdered sugar
- 1 shot glass of cherry liqueur
- 100 g cooking chocolate
Preparation:
- Whip the egg whites with sugar until stiff peaks form. Add the coffee and mix gently.
- Transfer the mixture into a piping bag and pipe eight squares (8 cm sides) onto a greased baking tray.
- Dry in an oven preheated to 90°C (194°F) for about 2 hours. Let cool completely.
- Whip the sweet cream with powdered sugar to make whipped cream.
- Melt the chocolate over a double boiler and mix in the cherry liqueur.
- Assemble the squares:
- Pour melted chocolate over 4 cooled coffee meringue squares.
- Add a layer of whipped cream.
- Top with more chocolate.
- Cover with the remaining meringue squares.
- Decorate with additional whipped cream as desired.
Orange Cake
For the sponge cake:
- 6 eggs
- 2 tablespoons lukewarm water
- 200 g sugar
- A pinch of salt
- 100 g flour
- 100 g cornstarch
For the filling:
- 8 sheets of white gelatin
- Grated zest of 1 orange
- 200 g orange juice
- 150 g sugar
- 400 g whipped cream
For garnish:
- 200 g sliced almonds
- 300 g whipped cream
- 8 candied orange slices
Preparation:
- Prepare the sponge cake batter by beating the eggs with sugar and water until fluffy. Sift in the flour, cornstarch, and salt. Bake in a preheated oven at 200°C (392°F) for about 30 minutes. Let cool and slice into two layers.
- To make the filling, dissolve the gelatin in a small amount of orange juice. Combine the orange zest, juice, and sugar, then gently fold in the whipped cream.
- Spread the filling between the cake layers and over the top and sides.
- Garnish with sliced almonds, whipped cream, and candied orange slices.
