Pies are comfort food, but they don’t need meat to steal the show. These two vegetarian pies bring flavor, texture, and warmth to your table. One features a crunchy walnut filling with aromatic spices, while the other is a soft, golden potato pie wrapped in crisp pastry. Perfect for family dinners, gatherings, or an indulgent snack, they’re easy to make and share.

Walnut Delight Pie

A flaky crust hides a rich, nutty filling that’s slightly sweet and lightly spiced.

Ingredients:

  • 16 sheets phyllo dough
  • 1 cup chopped walnuts
  • 1 medium onion, minced
  • 1 teaspoon cinnamon (optional)
  • Pinch of salt and black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Heat oil in a skillet and sauté the onion until soft. Add walnuts, cinnamon, salt, and pepper, and toast lightly for extra aroma.
  2. Lay phyllo sheets in a greased baking dish, brushing each layer with a little oil. Spread the walnut mixture between layers.
  3. Finish with a few phyllo sheets on top, brush with oil, and bake at 375°F until golden brown. Let it cool slightly before cutting.

Serving suggestion: Pair with a drizzle of honey or a sprinkle of chopped fresh parsley for extra flavor.

Rustic Potato Pie

This pie has a soft, comforting potato center wrapped in crisp layers of pastry—simple yet satisfying.

Ingredients:

  • 16 sheets phyllo dough
  • 2 pounds potatoes, peeled and shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil

Instructions:

  1. Drain excess moisture from the shredded potatoes and season with salt and pepper.
  2. Brush phyllo sheets with olive oil and layer with potatoes. Roll into spirals or fold into rectangles and place in a greased pan.
  3. Brush tops with oil and bake at 350°F until the crust turns golden and crisp. Serve warm.

Optional twist: Add sautéed onions, mushrooms, or fresh herbs to the potato filling for a more flavorful pie.
