After learning how to make marzipan, it’s time to start using it. Besides shaping figurines and decorating cakes, marzipan can also be used to make small sweets. These pralines are very tasty and, even more importantly, a feast for the eyes on the serving tray!
Ingredients (makes about 40 pieces):
14 oz raw marzipan
¾ cup powdered sugar
¾ cup finely chopped walnuts
1 tablespoon rum
2 tablespoons maraschino (cherry liqueur)
14 oz cooking chocolate (bittersweet or semisweet)
40 walnut halves
Mix the marzipan with sifted powdered sugar, chopped walnuts, rum, and maraschino. Roll the mixture out to about ⅜ inch thickness. Using a sharp knife, cut small trapezoids approximately ¾ x 1¼ inches. Melt the chocolate over a double boiler, then remove from heat and stir continuously until it starts to thicken. Reheat gently if needed. Place each marzipan piece on a fork and dip it into the chocolate. Let the excess drip off and place on a rack to dry. While the chocolate is still warm, press half a walnut onto each piece. Once dry, place the pralines in the refrigerator to set.
