This is my recipe for Lazy Pie, a delicious dessert perfect for fasting periods. I got this recipe from a local bakery known for its excellent version of this pie. It’s a perfect treat when you’re following a fasting diet (without dairy or eggs).
Ingredients for the Dough:
- 1/2 cup (113 g) plant-based margarine, melted (or fasting-friendly margarine)
- 1/2 cup (about 100 g) sugar
- 2 tablespoons lukewarm water
- 1 packet baking powder
- 2 1/2 cups (400 g) all-purpose flour
- 1 packet vanilla sugar
- 1/3 of a lemon, juiced
For the Filling:
- 3 1/4 lbs (1.4 kg) apples, grated
- 5 small cups (about 1 1/4 cups) sugar or 14 tablespoons sugar
- 1 cup water
- 1 packet vanilla sugar
- Crushed cookies, for sprinkling (make sure they are fasting-friendly if necessary)
Instructions:
- Prepare the Dough:
- Melt the plant-based margarine and mix it with the sugar, lukewarm water, baking powder, vanilla sugar, and lemon juice.
- Gradually add the flour, kneading the dough until smooth.
- Divide the dough into 2 equal portions.
- Roll each portion into a thin sheet on parchment paper. Place the rolled dough in the freezer to firm up.
- Prepare the Filling:
- Grate the apples and mix them with sugar, water, and vanilla sugar.
- Simmer for a few minutes, then let it cool. Once cooled, drain the liquid from the apples (do not discard the liquid – it will be used later!).
- Assemble the Pie:
- Grease a baking pan (similar to a standard round cake pan).
- Place one sheet of dough in the pan, then sprinkle with crushed cookies.
- Spread the drained apples on top of the cookies, then place the second sheet of dough over the apples.
- Finishing:
- Brush the top of the pie with the reserved apple cooking juice.
- Bake the pie at 350°F (180°C) for about 50-60 minutes, or until golden brown.
