Candy sushi is a fun, no-bake dessert made to look like sushi, but instead of fish and rice, it uses sweet ingredients like Rice Krispies treats, fruit roll-ups, licorice, and marshmallows. It’s especially popular at kids’ parties or as a cute edible craft.

Ingredients:

  • 1 tablespoon butter, cut into pieces
  • 12 regular marshmallows
  • 2 cups Rice Krispies (or any puffed cereal)
  • 4 fruit roll-ups (any flavor you like)
  • 8 strips licorice (I just buy the normal kind and cut it to match the roll-ups)

Instructions:

Melt the butter in a medium saucepan over low heat, then add the marshmallows. Stir until the marshmallows are completely melted. Remove from heat and add the cereal. Stir well to coat the cereal evenly in the melted marshmallows. (Basically, you’re making Rice Krispies treats.)

Roll out the fruit roll-ups. Place 1/4 of the coated cereal onto each roll-up, spreading it out and gathering it toward one side. Place 2 licorice twists in the center of the cereal mix. Wrap and roll the candy and fruit together, maneuvering the licorice to stay in the center so the final product looks like a sushi roll. Repeat with the remaining roll-ups. (It’s messy, but fun—especially with kids!)

Dip a sharp knife into a bowl of very warm water. Use the warm knife to cut the candy sushi into slices, then arrange on a plate and serve. (Cutting is kind of a pain, honestly. Let the kids help with the rolling—an adult should handle the slicing.)
