When making preserves, always use high-quality, fresh, and undamaged fruits and vegetables. Be sure to remove any bruised or overripe parts completely- spoiled produce can ruin the whole batch.

Good personal hygiene is essential to help keep bacteria to a minimum during preparation.

All utensils, jars, and containers should be thoroughly cleaned before use.

Jars and bottles used for storing your preserves should be sterilized. One easy method is to place them in the oven and heat to 212°F. Once they reach that temperature, turn off the oven and leave the jars inside to cool.

Jar lids should also be washed and cleaned.

Make sure the jars are sealed airtight. For extra protection, it’s a good idea to use a double seal—wipe the rim with alcohol before sealing.

When storing jars in your pantry, place a clean sheet of paper or cloth over the cellophane to protect from insects, which could puncture the seal and cause spoilage.

If you’re pouring hot preserves into jars, make sure the jars are preheated in the oven. Start by adding just one tablespoon of the hot mixture, wait a moment, then continue filling the jar slowly. This helps prevent thermal shock and cracking.

Store your finished preserves in a cool, dry, and dark place.
