Creamy Cauliflower Soup
Ingredients:
- 1 large head cauliflower
- 1 tablespoon salt (for boiling water)
- 6 tablespoons butter
- 4 tablespoons all-purpose flour
- 10 cups clear chicken or vegetable broth
- 3 egg yolks
- 1 tablespoon cold water
- ½ teaspoon black pepper
- ½ teaspoon nutmeg (optional, added flavor)
- ½ cup grated aged cheddar or Gruyère cheese
- 4 slices rye bread, buttered and lightly salted
Instructions:
Trim and wash the cauliflower. Cut into florets and boil in salted water (1 tablespoon salt per 4 cups water) for about 25–30 minutes until tender. Reserve 1 cup of the cooking liquid, then drain.
In a large pot, melt butter and whisk in flour to create a light roux. Gradually add broth and the reserved cauliflower liquid, whisking constantly. Bring to a boil and cook for 3–4 minutes.
Whisk egg yolks with 1 tablespoon cold water and slowly temper with a ladle of hot soup. Gradually stir back into the pot. Add pepper, nutmeg, and grated cheese.
Place cauliflower florets in a serving bowl and pour hot soup over them. Serve with buttered rye bread.
