But First, How Important Is Pizza Dough?

While toppings steal the show, pizza dough is the true backbone of a great pizza. The texture, chewiness, and crispiness all depend on how the dough is made. And with this quick pizza dough recipe, you get a beautifully smooth and airy crust—without hours of rising.

Ingredients:

  • 3¼ cups all-purpose flour, plus extra for dusting
  • 2¼ teaspoons instant dry yeast (one ¼-ounce packet)
  • 1 teaspoon fine sea salt
  • 1 teaspoon sugar
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon cornmeal, polenta, or semolina (for dusting)
  • About 1 cup warm water (around 225 ml)

Instructions:

  1. Preheat your oven to its highest setting (around 465°F / 240°C) and place two large baking sheets or pizza stones inside to heat up.
  2. Mix the dough: In a large mixing bowl, combine flour, yeast, salt, and sugar. Make a well in the center, pour in the olive oil, then gradually add warm water while stirring until a dough forms.
  3. Knead briefly: Transfer to a floured surface and knead just for about 1 minute, until smooth. Let rest while you prepare your toppings.
  4. Roll out: Divide the dough into two balls. Roll each one on a floured surface to a circle about 10 inches (25 cm) wide.
  5. Prepare for baking: Sprinkle cornmeal or semolina over a large square of parchment paper. Place dough on the paper, then press and stretch it to about 12 inches (30 cm) in diameter. The center should be about ¼ inch thick, with a ½ inch raised edge.
  6. Top your pizza: Spread with pizza sauce, add toppings, and drizzle with a little olive oil. Let sit for 10–15 minutes while the dough rises slightly.
  7. Bake: Transfer pizzas (with parchment) onto the preheated trays or stones. Bake for 10–15 minutes, or until the crust is golden and crispy.
