Preparation
1. Make the cake layers
- Preheat oven to 350°F (175°C).
- Beat egg whites until firm peaks form.
- Gradually add sugar while beating.
- Add egg yolks one by one, mixing gently.
- Fold in ground walnuts and flour with a spatula.
- Divide batter into three round pans (8 or 9-inch), lined with parchment.
- Bake each layer 12–15 minutes until lightly golden.
- Cool completely.
2. Make the walnut cream
- Heat milk and sugar in a saucepan.
- In a bowl mix flour + cornstarch with a little cold milk to dissolve.
- Add this mixture to hot milk and cook until thick like pudding.
- Remove from heat and cool completely.
- Beat softened butter until fluffy.
- Add cooled cream spoon by spoon.
- Stir in ground walnuts and vanilla.
3. Assemble
- Place first cake layer, spread cream.
- Repeat with the second and third layer.
- Cover the whole cake with remaining cream.
- Sprinkle chopped walnuts (or chocolate).
- Chill at least 4 hours (best overnight).

Preparation
1. Prepare the dough
- Combine flour, sugar, baking powder, and salt.
- Add cold butter and rub into flour until crumbly.
- Add egg, sour cream, and vanilla.
- Mix and knead briefly until a soft dough forms.
- Wrap and rest in fridge 20–30 minutes.
2. Prepare the filling
- Mix ground walnuts + sugar + vanilla.
- Add warm milk gradually until the mixture becomes spreadable (not too wet).
3. Form
- Preheat oven to 340°F (170°C).
- Roll out dough thinly (about 1/8 inch / 3 mm).
- Cut into small triangles.
- Place a bit of walnut filling at the base of each triangle.
- Roll from the wide side toward the point to form a crescent.
- Curve gently.
- Place on baking tray lined with parchment.
4. Bake
Bake 12–15 minutes, until bottoms are lightly golden
(the cookies should stay pale on top).
While still warm, roll in powdered sugar.
Let cool and store in a tin — they stay fresh for up to 2 weeks.
