Healthy Everyday Salads –
“Mixed Vegetables With Aromatic Oil”
Necessary ingredients for 4 people:
150 grams of smoked tofu,
100 grams of boiled and peeled broad beans,
100 grams of green salad,
16 cooked asparagus,
thyme,
olive oil,
coarse salt,
pepper in grain.
Preparation-
Beat 3 to 4 peppercorns in a bowl or container along with a little thyme, and some coarse salt into a mortar. Then add 60 grams of olive oil to this aromatic mixture and let it sit for a while.
Before serving, cut the tofu into triangles, and cut the asparagus lengthwise. At the end, put all the vegetables on a plate, decorate the tofu and season with strained aromatic oil.

Healthy Everyday Salad With Asparagus and Zucchini
Feeds 4 people:
300 grams of cooked asparagus,
150 grams of young zucchini,
100 grams of radicchio salad,
lemon,
marjoram,
bay,
olive oil, salt.

Preparation
Clean and wash the radish, also wash the zucchini and slice them into circles. Season them with lemon juice, oil, marjoram leaves and marinate for one hour. Blanch the asparagus in boiling water with a spoonful of oil and a bay leaf, drain, then cut into pieces. Mix with radicchio and zucchini, then add salt and cover with the marinade. Bon Appétit
