Greek Walnut Pie is a rich Mediterranean dessert layered with warm spices, citrus aroma, and a delicate honey syrup. This version blends toasted walnuts, Greek yogurt, and orange zest for deeper flavor and a moist, tender crumb that pairs beautifully with coffee or vanilla ice cream.
Ingredients:
- 2 cups finely chopped toasted walnuts
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup Greek yogurt
- 4 large eggs, separated
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- Zest of 1 orange
- 1 teaspoon pure vanilla extract
- Pinch of salt
For the Honey-Citrus Syrup:
- 3/4 cup honey
- 1/2 cup water
- 1 cinnamon stick
- Strip of orange peel
- 1 tablespoon fresh orange juice
- 1 tablespoon dark rum
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round baking pan and lightly flour it.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg yolks one at a time, mixing well after each addition. Stir in Greek yogurt and vanilla extract.
- In another bowl, combine flour, almond flour, baking powder, cinnamon, cloves, salt, and 1 1/2 cups of the chopped walnuts.
- Gradually mix dry ingredients into the wet mixture. Add orange zest.
- In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter to keep it light.
- Pour batter into prepared pan and sprinkle remaining walnuts on top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Syrup:
- In a saucepan, combine honey, water, cinnamon stick, and orange peel.
- Simmer for 8–10 minutes. Remove from heat and stir in orange juice and rum.
- Strain and allow to cool slightly.
While the cake is still warm, poke small holes across the surface using a skewer. Slowly pour the warm syrup over the cake and allow it to absorb fully. Cool completely before slicing.
