This saffron chicken with rice and peas is exactly that kind of meal. It’s simple but layered with flavor: tender chicken, sweet tomatoes, fragrant saffron, and fluffy rice that absorbs every drop of savory goodness.

It’s the kind of comforting, Mediterranean-inspired dinner that feels elegant without trying too hard — perfect for family nights or casual entertaining.

Ingredients (Serves 4–6)

  • 2 tablespoons olive oil
  • 2 to 3 pounds chicken pieces (cut into 8 pieces, skin removed if desired)
  • Salt and black pepper, to taste
  • 1 small onion, finely chopped
  • 2 teaspoons paprika
  • 1 garlic clove, minced
  • 8 medium fresh tomatoes, peeled, seeded, and chopped
  • 1 ½ cups long-grain white rice
  • 3 cups boiling water or chicken broth
  • Large pinch saffron threads or ¼ teaspoon ground saffron
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium heat.
  2. Season chicken with salt and pepper. Brown on all sides, starting skin-side down. Cook until lightly golden, turning occasionally. Remove and set aside.
  3. In the same pan, sauté onion until soft and translucent (about 4–5 minutes).
  4. Stir in paprika and cook briefly to release its flavor. Add garlic and chopped tomatoes.
  5. Cook over medium-high heat for about 5 minutes until tomatoes reduce and thicken slightly.
  6. Stir in rice, boiling water (or broth), and saffron. Mix well.
  7. Return chicken to the pan. Bring to a boil, then reduce heat to low. Cover tightly and simmer for about 20 minutes.
  8. Remove chicken temporarily, stir in peas and parsley, and cook another 5–10 minutes until rice is tender.
  9. Nestle chicken back on top before serving.

Variation

If using fresh peas, you’ll need about 14 ounces in pods (approximately 1 ½ cups shelled). Add them with the rice and cook together.
