This is a bold, smoky, cheesy skillet bake inspired by firehouse comfort food—but rebuilt with cauliflower instead of potatoes for a lighter, low-carb twist. It’s richer, spicier, and more layered than the original version, with a deeper flavor base and upgraded seasoning balance.
Ingredients (Serves 2–3):
- 3 cups cauliflower florets (about 14 oz / 400 g)
- 1/2 medium onion, finely chopped
- 1 1/2 tablespoons olive oil
- 1 teaspoon smoked paprika (upgrade from regular paprika)
- 3/4 teaspoon garlic powder
- 3/4 teaspoon chili powder
- 1/2 teaspoon ground cumin (new flavor depth)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/3 cup sour cream
- 1/3 cup chunky salsa
- 3 tablespoons sliced jalapeños
- 3/4 cup shredded cheese (mix of cheddar + pepper jack)
Instructions:
- Steam or microwave cauliflower for 6–8 minutes until very soft but not watery. Drain well.
- Heat olive oil in a cast iron or oven-safe skillet over medium heat.
- Add onion and cook 4–5 minutes until golden and slightly caramelized.
- Add cauliflower and lightly mash it in the pan for a rustic, “potato-like” texture.
- Season with smoked paprika, garlic powder, chili powder, cumin, salt, and pepper. Stir well so everything is deeply coated.
- Drop spoonfuls of sour cream and salsa across the top without fully mixing in.
- Sprinkle jalapeños and cheese evenly over the surface.
