There’s a certain kind of comfort that only gnocchi can deliver—soft, pillowy, and just rustic enough to feel like home cooking, even when dressed up. This version, tossed with blistered cherry tomatoes, creamy mozzarella balls, and fresh basil, is the kind of unfussy Italian-inspired dish that feels both indulgent and effortless. A quick sauté in butter pulls everything together, while toasted pine nuts add just enough crunch to keep things interesting.

Ingredients (Serves 4)

  • 1.1 lbs (500 g) potatoes
  • 2 egg yolks
  • Salt and freshly ground black pepper, to taste
  • 1 1/4 cups (150 g) all-purpose flour
  • 2 tablespoons unsalted butter
  • 10 oz (300 g) cherry tomatoes
  • 9 oz (250 g) mozzarella balls (bocconcini or ciliegine)
  • 1 small bunch of fresh basil
  • 1 oz (30 g) pine nuts

Instructions

1. Prepare the Potatoes

Wash the potatoes and boil them whole, with the skins on, for about 25 minutes until fork-tender. Drain and peel while still hot. Mash or press them through a potato ricer and let cool slightly.

2. Make the Gnocchi Dough

To the warm mashed potatoes, add the egg yolks, a pinch of salt, and flour. Knead gently until a smooth dough forms. Avoid overworking to keep the gnocchi tender.

3. Shape and Cook the Gnocchi

On a floured surface, roll the dough into long ropes and cut into bite-sized pieces. Optionally, press each piece gently with a fork for texture. Boil the gnocchi in a large pot of salted water for about 5 minutes, or until they float. Drain thoroughly.

4. Sauté and Combine

In a large skillet, melt the butter over medium heat. Add the gnocchi and stir gently to coat. Add the cherry tomatoes (whole or halved), and sauté for 1–2 minutes until just softened.

5. Finish with Mozzarella and Herbs

Add the drained mozzarella balls, season with salt and pepper, and toss gently until the cheese begins to soften. Remove from heat.

6. Garnish and Serve

Top with fresh basil leaves and toasted pine nuts for extra flavor and crunch. Serve immediately.
