Ingredients (Serves 4)

8 smoked trout fillets

1 large head broccoli, cut into florets

1.5 lbs potatoes

2 tablespoons olive oil

1 tablespoon capers

1 large tomato, peeled and diced (seeds removed)

2 cloves garlic, minced

1 lemon, sliced

Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Blanch the broccoli for 3–4 minutes until tender but still bright green. Drain and set aside.
  2. In a skillet, heat 1 tablespoon olive oil over medium heat. Add minced garlic and sauté briefly until fragrant. Add the broccoli and cook for a few minutes, adding a splash of water if needed. Season lightly with salt and pepper.
  3. Wash the potatoes and roast them whole with skin on at 400°F for about 40–50 minutes until fork-tender. Let cool slightly, peel if desired, and cut into cubes.
  4. Toss the warm potatoes with the remaining olive oil, capers, and diced tomato. Adjust seasoning to taste.
