These crispy potato patties are golden and crunchy on the outside, soft and comforting inside, and finished with a fresh tomato topping for extra brightness. Made with simple ingredients, they are perfect for an easy vegetarian lunch or a cozy weeknight dinner.

Ingredients (Serves 4)

2.2 lb (about 4–5 medium) potatoes, peeled and grated

Salt and black pepper, to taste

7 tbsp butter (for frying)

1.1 lb (about 4 cups) fresh tomatoes, diced

2–3 garlic cloves, minced

4 tbsp olive oil

1 cup arugula or shredded green lettuce

Instructions

Peel and wash the potatoes, then grate them finely. Season with salt and black pepper. Shape the mixture into about 12 small patties.

Heat butter in a large skillet over medium heat. Fry the potato patties until golden brown and crispy on both sides.

Transfer the cooked patties to a plate lined with paper towels to remove excess oil. Place them in a preheated oven at 300°F (150°C) for about 15 minutes to keep warm.

In a bowl, combine diced tomatoes, minced garlic, olive oil, salt, and pepper. Mix gently to create a fresh tomato topping.

Spoon the tomato mixture over the warm potato patties and return them to the oven for another 5 minutes to warm through.

Serve immediately, topped with fresh arugula or shredded lettuce.
