Ingredients (Serves 4)

For the steak:

  • 1.1 lb beef steak (flank, sirloin, or similar cut suitable for stuffing)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 7 oz cream cheese, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried tarragon (or 1 tablespoon fresh, chopped)

For the warm green bean salad:

  • 1.1 lb fresh green beans, trimmed
  • 2 small red onions, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh orange juice
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

For garnish:

  • 5 oz radishes, thinly sliced

Instructions

  1. Bring a large pot of salted water to a boil. Cook the green beans for about 8 minutes until tender-crisp. Drain and set aside.
  2. In a small bowl, whisk together Dijon mustard, orange juice, white wine vinegar, and olive oil. Season with salt and pepper. Toss the warm green beans with diced red onion, garlic, and dressing. Set aside.
  3. In another bowl, mix softened cream cheese with parsley and tarragon. Season lightly with salt and pepper.
  4. Slice the steak horizontally to create a pocket (do not cut all the way through). Fill generously with the herb cream cheese mixture.
  5. Heat olive oil in a large skillet over medium-high heat. Sear the stuffed steak for 4–5 minutes per side (depending on thickness) until nicely browned and cooked to your preferred doneness.
  6. Let the steak rest for 5 minutes before slicing.
