Here are several simple and delicious fruit and vegetable recipes that can be enjoyed by young children. They are soft, naturally sweet, and easy to prepare.

Cooked Apples with Rice

Ingredients

  • 4 Golden Delicious apples
  • 1 cup brown rice
  • 1 packet vanilla sugar
  • 1 tablespoon honey
  • 1 cup apple juice
  • A little water
  • A pinch of cinnamon, optional
  • 1 small piece of dark chocolate, optional

Preparation

Peel and core the apples, then cut them into quarters. Place them in a saucepan with a little water and the apple juice. Cook until the apples are very soft.

Blend the cooked apples and add some of the cooking liquid until you have a smooth, thin purée.

Cook the rice separately until tender. Drain it well, then mix it with the apple purée.

For extra flavor, add a pinch of cinnamon or a small piece of melted dark chocolate.


Summer Fruit Mix

Ingredients

  • 1 peach
  • 1 apricot
  • 1 banana
  • 1/2 cup peach juice
  • 1 tablespoon rice flakes
  • 1/2 tablespoon corn flakes
  • A pinch of cinnamon

Preparation

Pour hot water over the peach and apricot, then peel them. Cut the fruit into pieces and place it in a blender.

Add the sliced banana, peach juice, rice flakes, corn flakes, and cinnamon. Blend until smooth.

For older children, you can simply mash the fruit with a fork instead of blending it completely, leaving some small, soft pieces for a more interesting texture.


Fruit Rice Pudding

Ingredients

  • 1/2 cup rice
  • 3 cups water
  • 1 apple, peeled and sliced
  • 2 apricots
  • A pinch of cinnamon, optional
  • 1/2 teaspoon freshly ground flaxseed, optional
  • A little apple juice or milk, if needed

Preparation

Wash the rice and place it in a saucepan with the water. Cook until tender, then drain.

Peel and core the apple and cut it into slices. Cook it briefly in a little water until soft.

Halve the apricots, remove the pits, and soften them with hot water.

Combine the cooked rice, apple, and apricots. Blend briefly or mash with a fork, depending on the texture your child prefers.

If the mixture is too thick, add a little apple juice or milk. Finish with a pinch of cinnamon and a small amount of freshly ground flaxseed, if desired.


Zucchini with Potato

Ingredients

  • 1 medium potato, peeled and diced
  • 1 medium zucchini, or 1/2 large zucchini
  • A little olive oil
  • A pinch of salt, optional

Preparation

Place the diced potato and zucchini in boiling water. Cook for about 20 minutes, or until both vegetables are very tender.

Drain well and drizzle with a little olive oil.

For younger children, mash the vegetables with a fork. Older kids can enjoy them as soft pieces or a chunky vegetable mash.
