With green peas as its centerpiece and pillowy homemade dumplings as its heart, it’s a reminder that the most comforting meals often come from the most modest kitchens. Flecked with fresh parsley and paprika, and ready in under an hour, this dish transforms pantry staples into something quietly elegant — the kind of soup that warms you without weighing you down.

Ingredients:

For the Soup:

  • 1 tablespoon olive oil or butter
  • 1 small yellow onion, diced
  • 1 parsley root (or 1 small parsnip), peeled and diced
  • 4 cups water (1 quart)
  • 8 ounces (about 1½ cups) fresh or frozen green peas
  • ¼ teaspoon sweet paprika
  • 2 tablespoons chopped fresh parsley leaves
  • Salt to taste

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 large egg
  • ¼ teaspoon salt
  • Cold water, as needed (2–4 tablespoons, added gradually)

Instructions:

  1. Prepare the Base:
    In a medium soup pot, heat the olive oil over medium heat. Add the diced onion and parsley root. Sprinkle lightly with salt and sauté until the onions turn translucent, about 7–8 minutes.
  2. Simmer the Peas:
    Pour in the water and bring to a boil. Add the green peas, reduce heat to a simmer, and cook for 10–15 minutes, or until the peas are tender.
  3. Mix the Dumpling Dough:
    In a bowl, combine the flour, egg, and salt. Slowly stir in cold water, one tablespoon at a time, mixing with a wooden spoon until a sticky, slightly firm dough forms. Let it rest for about 10 minutes.
  4. Shape and Cook the Dumplings:
    Dip a spoon into the boiling soup to prevent sticking. Scoop small portions of dough — about half the size you want the dumplings to be, as they will expand — and drop them into the simmering soup. Continue until all dough is used.
  5. Finish the Soup:
    When the dumplings float to the top (in about 3–4 minutes), they’re done. Stir in the paprika and fresh parsley. Taste and adjust salt as needed.
