Fruity Coconut Banana Cake
Simple, creamy cake that combines the tropical flavors of coconut, fresh bananas, and a hint of vanilla pudding. This no-bake cake blends soft banana slices with crunchy cookie crumbs and a luscious coconut filling. For a fresh twist, replace some bananas with raspberries for a tangy note.
Ingredients:
2 cups (480 ml) milk
2 vanilla pudding mixes
3 tablespoons granulated sugar
1 cup (225 g) margarine or unsalted butter, softened
1 cup powdered sugar
1 ½ cups shredded coconut
1 ½ cups crushed plain cookies (like graham crackers or digestive biscuits)
About 2 pounds (1 kg) bananas, sliced
Optional: 1 cup (400 g) raspberries (to replace some bananas)
Preparation:
Beat the margarine and powdered sugar until fluffy. Prepare vanilla pudding with 3 tablespoons sugar and a small amount of milk; cook the rest of the milk with the pudding mix until thickened. Let cool. Combine the pudding with the margarine mixture, crushed cookies, and coconut. Gently fold in banana slices (and raspberries if using). Spread the mixture onto a serving plate greased with margarine. Decorate with whipped cream on top.
Classic Chocolate Layer Cake
This rich and moist chocolate cake is layered with a silky chocolate cream made from eggs, sugar, butter, and a hint of salt. The batter blends melted chocolate with fluffy egg whites to create a delicate texture. Once baked, the cake is sliced and filled with a smooth, cooked chocolate custard, then coated all over with the luscious filling.
Ingredients:
Cake:
5.3 oz (150 g) dark chocolate
5.3 oz (150 g) unsalted butter
2 tablespoons all-purpose flour
6 large eggs
¾ cup (150 g) granulated sugar
Filling:
7 oz (200 g) dark chocolate, grated
1 cup (200 g) granulated sugar
5 large eggs
7 oz (200 g) unsalted butter, softened
½ cup (50 g) fine breadcrumbs
Pinch of salt
Preparation:
Melt chocolate in a small amount of water. Beat butter and egg yolks until fluffy, then add the melted chocolate and mix well. Add sugar, flour, and beaten egg whites folded gently. Pour batter into a greased and lined pan. Bake at 320–350°F (160–180°C) until a toothpick comes out clean. Cool and slice cake horizontally into two layers.
For the filling, melt chocolate and mix with sugar, salt, and eggs. Cook over steam until thickened. Let cool, then beat in softened butter until smooth. Spread the filling between cake layers and cover the entire cake. Chill before serving.
