Ingredients:
- 1 lb ground beef or ground turkey
- 1 large eggplant (about 1 lb), peeled and chopped
- 1 large egg
- ½ cup plain breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons finely chopped red bell pepper
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil, for frying
- 1 cup tomato sauce (optional for serving)
Instructions:
1. Prepare the Eggplant:
- Peel and cut the eggplant into small cubes.
- Boil for 5–7 minutes until soft, then drain and squeeze out excess water.
2. Mix the Meatball Ingredients:
- In a large bowl, combine the ground meat, cooked eggplant, egg, breadcrumbs, Parmesan, parsley, bell pepper, garlic powder, smoked paprika, salt, and pepper.
- Mix until fully combined.
3. Form the Meatballs:
- Shape the mixture into medium-sized meatballs (about 1 ½ inches in diameter).
4. Cook the Meatballs:
- Heat olive oil in a skillet over medium heat.
- Fry the meatballs until golden brown on all sides, about 6–8 minutes.
