Éclairs Miss Stefice is a delicious variation of the classic éclair, a popular French pastry. In this recipe, the dough is enriched with ground walnuts and grated chocolate, adding a nutty, rich flavor.

Ingredients for the Dough:

  • 1 stick (4 oz) butter
  • 1 3/4 cups all-purpose flour
  • 1/2 cup finely ground walnuts
  • 2 squares grated chocolate (approx. 2 oz)
  • 1 egg yolk
  • 1/2 cup powdered sugar

Ingredients for the Filling (Cream):

  • 3 whole eggs
  • 3 tablespoons granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 stick (4 oz) butter (added after cooking)
  • 2 squares chocolate (approx. 2 oz, added after cooking)

Instructions:

  1. Prepare the Dough:
    • Combine butter, flour, walnuts, grated chocolate, egg yolk, and powdered sugar in a bowl to form a smooth dough.
    • Chill the dough in the refrigerator for about 30 minutes.
  2. Bake the Pastries:
    • Roll out the dough and cut into small, elongated shapes resembling mini éclairs.
    • Place on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 10–12 minutes, or until lightly golden.
  3. Prepare the Filling:
    • In a saucepan, whisk together eggs, sugar, and flour. Cook over low heat, stirring constantly, until the mixture thickens.
    • Remove from heat, let it cool completely, and then mix in softened butter and melted chocolate.
  4. Assemble the Éclairs:
    • Spread a layer of the cream on one pastry and sandwich it with another. Repeat until all éclairs are paired.
  5. Add the Chocolate Glaze:
    • Dip or spread melted chocolate over the top of each éclair. Allow the glaze to set before serving.

Tip:
For a larger batch, double the dough recipe while keeping the cream quantity the same—it’s usually enough for additional pastries.
