Ingredients
- 2 cups full-fat cottage cheese, well drained
- 2 cups all-purpose flour
- 6 tablespoons neutral vegetable oil (such as canola oil)
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 10–12 fresh apricots
- 10–12 teaspoons granulated sugar (for filling)
- 1½ cups plain breadcrumbs
- 3 tablespoons unsalted butter
- Extra granulated sugar for serving
Instructions
- Wash the apricots and pat them dry. Cut each apricot in half, remove the pit, and place about 1 teaspoon of sugar inside before gently closing the fruit back together.
- In a large bowl, combine the cottage cheese, flour, vegetable oil, vanilla extract, and salt. Mix until a soft dough forms. Knead briefly with your hands just until smooth. Do not overwork the dough.
- Bring a large pot of lightly salted water to a gentle boil.
- Pinch off a portion of dough, flatten it in your hand, and wrap it completely around one apricot. Seal the edges carefully so there are no openings.
- Repeat until all the apricots are wrapped.
- Carefully place the dumplings into the simmering water. Reduce the heat so the water gently bubbles rather than boils vigorously. Stir occasionally to prevent sticking.
- Cook for 10–12 minutes, or until the dumplings are cooked through and float. Avoid overcooking, as they may become too soft.
- Meanwhile, melt the butter in a skillet over medium heat. Add the breadcrumbs and toast, stirring frequently, until golden brown and fragrant.
- Remove the cooked dumplings with a slotted spoon and immediately roll them in the toasted breadcrumbs.
- Sprinkle with additional sugar and serve warm.
