Hazelnut Delight Cake

Ingredients:

  • 1/2 cup sugar
  • 4 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup roasted, ground hazelnuts
  • 1/4 cup chopped almonds
  • 1 teaspoon rum (optional)
  • 1/4 cup apricot jam

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a rectangular baking pan with butter. Sprinkle the sides of the pan with chopped almonds, then place the pan in the refrigerator to allow the almonds to stick to the butter.
  2. In a large bowl, whisk the eggs and sugar together until light and fluffy. Add the flour, ground hazelnuts, softened butter, and rum (if using). Stir until all ingredients are well combined into a smooth batter.
  3. Pour the batter into the prepared pan and bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
  4. Once cooled, warm the apricot jam slightly in the microwave or on the stove to make it easier to spread. Evenly spread the apricot jam over the top of the cooled cake.
  5. Using a sharp knife, cut the cake into finger-sized pieces.

Light Fruit Pudding Delight

Ingredients:

  • 3 packets vanilla pudding mix
  • 1 1/2 cups sugar
  • A mix of chopped fruit (apples, pears, raisins, chopped walnuts, bananas, kiwi)
  • 4 cups water
  • 1 cup water (for mixing the pudding)

Instructions:

  1. In a saucepan, bring 3 cups of water to a boil. While waiting, mix 1 cup of water with the 3 packets of vanilla pudding mix to create a smooth paste.
  2. Once the water begins to simmer, add the firmer fruits first, like apples and pears, followed by the softer fruits like bananas and kiwi. Cook for a minute to soften them.
  3. Gradually stir in the pudding mixture and continue to cook, stirring constantly, for about 5 minutes until it thickens.
  4. Remove from heat and pour the pudding mixture into a lightly greased bundt pan or another dish. Allow it to cool and set in the refrigerator.
  5. Once fully set, carefully turn the dessert out onto a serving platter. Slice it like a bundt cake and serve chilled.

Lemon Bar Delight

Ingredients:

  • 4 large egg yolks
  • 1 1/4 cups (250g) sugar
  • Zest and juice of 1 lemon
  • 3/4 cup (200g) unsalted butter
  • 1 large sheet of wafer paper
  • For the topping:
    • 4 oz (about 100g) chocolate bars
    • 3 tablespoons warm milk

Instructions:

  1. In a double boiler or heatproof bowl, combine the egg yolks, 3/4 cup sugar, lemon zest, and lemon juice. Whisk the mixture while heating it over a gentle flame. Continue whisking until the mixture thickens. Remove from heat and let it cool.
  2. In a separate bowl, beat 3/4 cup (200g) softened butter with the remaining 1/2 cup sugar until fluffy. Once the lemon mixture has cooled, gently fold it into the butter mixture until fully combined.
  3. Take a large sheet of wafer paper and cut it in half. Spread the lemon-butter mixture over one half of the wafer sheet. Place the second half of the wafer on top. Press gently, then place a heavy object on top to help the layers stick together. Chill in the refrigerator for a few hours until set.
  4. For the topping, melt the 4 oz (100g) chocolate in a small saucepan over low heat, adding the 3 tablespoons of warm milk. Stir to combine into a smooth glaze.
  5. Pour the melted chocolate glaze over the top of the wafer stack. Use a knife to spread the glaze evenly across the surface. Let the cake cool and set before cutting it into small bars.
