Chocolate & Cream Layered Delight

Ingredients:

  • 1 1/2 cups granulated sugar

  • 1/3 cup water

  • 1/2 cup margarine (or unsalted butter)

  • 2/3 cup milk powder (or powdered milk)

  • 3/4 cup melted chocolate

Instructions:

  1. In a medium saucepan, combine the sugar and water. Bring to a boil and let it simmer for 3 minutes.

  2. Remove the pan from the heat and immediately add the margarine (or butter) and milk powder. Stir well until the margarine melts and the mixture becomes smooth.

  3. Quickly separate 1/3 of the mixture into another bowl, and stir in the melted chocolate until well combined.

  4. In a triangular mold (or a similar-shaped pan), alternate layers of the dark and light mixtures, starting with the dark layer.

  5. Place the mold in the freezer to set for about 30 minutes, then transfer to the refrigerator to fully chill and harden.

  6. Be sure to work quickly, as the mixture sets fast!

Note: Do not double the recipe! It sets so quickly that it will be impossible to shape if you make a larger batch.

Chocolate Nut Bars

Ingredients:

  • 1/2 cup water

  • 2 cups granulated sugar

  • 1/2 cup margarine (or unsalted butter)

  • 1/2 cup ground walnuts

  • 2 cups crushed biscuits (such as graham crackers or a similar type; I usually use crushed Plazma biscuits)

Topping:

  • 1/4 cup granulated sugar

  • 3.5 oz (100g) chocolate (milk or dark)

Instructions:

  1. In a saucepan, bring the water and sugar to a boil. Once boiling, add the margarine (or butter) and stir until it melts.

  2. Stir in the crushed biscuits and ground walnuts into the mixture.

  3. If you like, you can add 2 small bars of cocoa chocolate, but it’s optional.

  4. Pour the mixture into a lightly greased smaller baking pan and quickly smooth it out as it sets fast.

  5. For the topping, melt the chocolate and mix with the sugar, then pour it over the cooled mixture.

  6. Let the bars cool completely and firm up before cutting into squares.

Homemade Caramels

Ingredients:

  • 1 cup water

  • 1 cup heavy cream

  • 3 cups granulated sugar

  • 2 tablespoons butter

  • 4 teaspoons vanilla sugar (or 1 teaspoon vanilla extract)

Instructions:

  1. In a large saucepan, melt the sugar over medium heat, stirring constantly, until it turns a golden brown (be careful not to burn it).

  2. Gradually add the hot water to the melted sugar, stirring continuously. Let it cook for a few minutes on medium heat until the liquid evaporates.

  3. Add the butter, vanilla sugar (or vanilla extract), and heavy cream, stirring constantly. Continue to cook and stir until the mixture thickens (about 45 minutes).

  4. Once the mixture has thickened, transfer the pot to a larger container filled with cold water. Stir for an additional 5 minutes to help it cool.

  5. Pour the caramel mixture into a baking pan lined with greased aluminum foil (this helps prevent sticking).

  6. Allow the mixture to cool completely and set. Once fully cooled, use a sharp knife to cut the caramel into small squares.

  4. After freezing, shape the mixture into 10 small bars (like the classic Bounty bars).

  5. Melt the chocolate in a microwave or over a double boiler, and dip each bar into the chocolate, coating it evenly.

  6. Place the chocolate-covered bars in the refrigerator to set and firm up.

Lemon Vanilla Sandwich Cookies

Ingredients:

  • 4 1/2 cups all-purpose flour (I mix soft and hard flour, 1:2, but you can use whichever you prefer)

  • 2/3 cup margarine (or vegetable shortening)

  • 4 tablespoons granulated sugar

  • 2 packets vanilla sugar (or 2 teaspoons vanilla extract)

  • Zest and juice of 1 lemon

  • 2 tablespoons sour cream

  • A pinch of salt

  • 1/2 teaspoon baking powder

  • A few drops of vanilla extract

  • 1 egg

  • 1 egg yolk

Instructions:

  1. Soften the margarine and whip it until fluffy. Add the granulated sugar, vanilla sugar (or extract), lemon zest, lemon juice, and vanilla extract. Continue to beat, adding each ingredient only when the previous one is fully combined.

  2. Add the sour cream, salt, egg, and egg yolk to the mixture.

  3. Gradually add the flour, previously mixed with the baking powder, a little at a time.

  4. At some point, stop using the mixer and switch to your hands. Knead the dough until it’s smooth, shiny, and compact.

  5. Wrap the dough in plastic wrap and refrigerate for 1-2 hours.

  6. Roll out the dough thinly (a couple of millimeters thick). Use a cookie cutter to cut out circles and place them on a baking sheet lined with parchment paper.

  7. Bake at 350°F (180°C) and keep an eye on them—these cookies should stay light in color!

  8. Once baked, dust the cookies with powdered sugar and sandwich them with your favorite jam.

  9. Let the cookies rest in the refrigerator for a few hours to allow the jam to set and absorb into the cookies. These cookies can last a long time if stored properly.

Chocolate Nut Cups

Ingredients:

  • 8.8 oz (250g) chocolate (dark or milk, your choice)

  • 8.8 oz (250g) margarine (or unsalted butter)

  • Dried fruits, chopped nuts (hazelnuts, walnuts, or any preferred nuts)

  • Alternatively, make praline by caramelizing nuts with sugar and grinding them

Instructions:

  1. In a saucepan, melt the chocolate and margarine (or butter) together, stirring constantly to prevent the margarine from separating.

  2. Finely chop your choice of dried fruits and nuts, or prepare a praline by caramelizing the nuts with sugar and grinding them.

  3. Spoon small amounts of the nut mixture into individual cupcake liners or mini paper cups.

  4. Pour the melted chocolate over the mixture in each cup, covering it completely. Using a small jug or pourer makes it easier to fill the cups evenly.

  2. In a small saucepan, melt the white chocolate with margarine (or butter) and add a little milk and sugar, cooking until the mixture thickens and becomes smooth.

  3. Pour the milk-chocolate mixture into the dry ingredients and mix well until the dough comes together.

Poppy Seed, Chocolate, and Almond Strudel

For the Filling:

  • 3 1/2 cups ground poppy seeds

  • 3 3/4 cups granulated sugar

  • 2 cups milk

For the Dough:

  • 2 1/4 cups vegetable shortening (or lard)

  • 6 tablespoons sugar

  • 3 egg yolks

  • 1 whole egg

  • 2 cups milk (reserve some to dissolve the yeast)

  • 2 teaspoons active dry yeast

  • 4 1/2 to 5 cups all-purpose flour (or until dough is soft, like bread dough)

For the Topping:

  • 2 egg whites (for brushing on the top)

  • Optional: Slivered almonds for garnish (you can sprinkle on top after baking)

Instructions:

  1. In a medium saucepan, combine the ground poppy seeds, sugar, and milk. Cook over medium heat, stirring occasionally, for about 5-10 minutes, until the poppy seeds are fully soaked and the mixture thickens. Remove from heat and let it cool.

  2. In a large bowl, cream the shortening (or lard) with the sugar until smooth.
Add the egg yolks and the whole egg, mixing well.
In a small bowl, dissolve the yeast in 1/2 cup of warm milk, then add this mixture to the dough mixture.
Gradually add flour, mixing until you get a soft dough that is smooth and pliable, similar to bread dough.
Divide the dough into 5 equal portions.

  3. Roll out each portion of dough on a floured surface to fit the size of your baking sheet.
Place the first layer of dough onto an ungreased baking sheet, then spread a quarter of the poppy seed filling evenly on top.
Add the second layer of dough and repeat the process until all layers are assembled, finishing with the final layer of dough.
Brush the top layer with the egg whites.

  4. Preheat the oven to 350°F (180°C).
Before baking, use a toothpick to prick the cake in several places to prevent it from rising too much.
Bake for about 30-35 minutes or until the top is golden brown.

  5. If desired, sprinkle slivered almonds on top of the cake after baking for added flavor and texture.

This strudel is rich, sweet, and filled with a delightful blend of poppy seeds, chocolate, and almonds.

Instructions:

  1. In a saucepan, melt the sugar and margarine (or butter) together over medium heat.

Remove from the heat and allow to cool slightly.

  4. Once the filling has cooled a little, spread it evenly between two thin sheets of wafer (oblanda) and allow it to cool completely.

Pour the chocolate glaze over the cooled layers and let it set in the refrigerator.

Chocolate Truffle Pops

Ingredients:

  • Your favorite filling for the truffles (such as crushed biscuits, nuts, dried fruit, or cream)

  • 3.5 oz (100g) chocolate (dark or milk)

  • 1 tablespoon vegetable oil

Instructions:

  1. Roll your filling into small balls of the desired size, ensuring they are compact. Place them on a tray or plate and let them chill in the fridge until they are firm (about 30 minutes).
Once chilled, insert a toothpick into each truffle ball.

  2. Melt the chocolate and vegetable oil together. The ratio is 1 piece of chocolate to 1 tablespoon of oil. Stir until the mixture is smooth and glossy.

  3. Dip each truffle into the melted chocolate, making sure it’s fully coated. Allow any excess chocolate to drip off.

  4. Stick the toothpicks into Styrofoam or another holder so the truffles don’t touch anything while they set.
Let the chocolate-covered truffles cool completely in the fridge until firm.
