Cherry Baklava (10 Servings)
Ingredients:
- 1.5 lb (700 g) thin phyllo sheets
- 1.5 lb (700 g) pitted cherries
- 1 lb (450 g) sugar
- Oil for brushing
Instructions:
- Layer every third sheet of phyllo with a generous amount of cherries. Sprinkle about 4–5 tablespoons of sugar per pound of cherries. Do not drain the cherries — as they bake, they release natural juices that keep the baklava moist.
- After layering all sheets and cherries, brush the top phyllo with cherry juice, sprinkle extra sugar, and drizzle with oil.
- Bake at 350°F (175°C) for about 40 minutes until golden and bubbling. Serve warm or cooled
Mixed Fruit Baklava (Miranda’s Version)
Prep Time: 40 minutes
Ingredients:
- 1.1 lb (500 g) fresh phyllo sheets
- 2.2 lb (1 kg) mixed fruit (fresh or canned)
- 3 large eggs
- ¾ cup (200 ml) sour cream
- 7 oz (200 g) sugar
- ⅓ cup (100 ml) oil
- 1 tsp baking powder
Syrup:
- 2 cups (500 ml) water
- 7 oz (200 g) sugar
- Juice of 1 lemon
Instructions:
- Beat the eggs, sugar, sour cream, oil, and baking powder until smooth.
- Prepare the fruit (clean fresh or drain canned).
- Oil a baking pan and layer half the phyllo sheets, brushing each with the egg mixture. Spread the fruit evenly. Cover with remaining phyllo sheets, brushing each with the egg mixture.
- Bake at 350°F (180°C) for 40 minutes.
- Make the syrup by boiling water, sugar, and lemon juice. Pour syrup over the cooled baklava.
Tip: Use peaches, forest berries, grapes, plums, or a combination.
Fruit Baklava with Sour Apples or Cherries
Ingredients:
- 2.2 lb (1 kg) pitted cherries or peeled sour apples
- 1 package (1 lb / 450 g) phyllo sheets
- Juice of 1 lemon
- 3 large eggs
- ¾ cup sugar
- ¾ cup oil
- ¾ cup sour cream
- 1 tsp baking powder
- 1 tsp vanilla sugar
Syrup:
- 1.7 cups (400 ml) water
- 2 cups (400 g) sugar
- Juice of 1 lemon
Instructions:
- Sweeten cherries with sugar. Peel, grate, and lightly sauté the apples.
- Mix eggs, sugar, oil, sour cream, baking powder, and vanilla sugar.
- Divide phyllo sheets and egg mixture in two equal parts. Grease a baking pan.
- Layer phyllo sheets, brushing each with egg mixture until half is used. Spread fruit evenly, then continue layering remaining phyllo sheets, brushing each with egg mixture. Cut raw baklava into diamond shapes.
- Bake until golden. Prepare syrup by boiling water, sugar, and lemon juice. Pour hot syrup over the hot baklava for a moist, glossy finish.
