Ingredients:
1 cup shredded sharp cheddar cheese
3 tablespoons cream cheese (or unsalted butter for a lighter version)
1 teaspoon baking powder
2 large eggs
3/4 cup whole milk
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup vegetable oil (for frying)
Instructions:
In a mixing bowl, combine shredded cheddar and cream cheese until smooth.
Add baking powder, eggs, milk, salt, pepper, and flour gradually, mixing until the dough is soft but pliable.
Heat oil in a large skillet over medium-high heat.
Using a tablespoon, scoop portions of the dough and shape them into small croquettes.
Fry the croquettes until golden brown on all sides, about 2–3 minutes per batch.
Remove from oil and drain on paper towels. Serve immediately while warm.
