This bright and refreshing carrot salad is simple, healthy, and full of flavor. Sweet carrots meet creamy yogurt and a hint of garlic for a delicious side dish that pairs beautifully with grilled meats or light lunches. It’s quick to make and brings a pop of color to any table.

Ingredients:

1 pound carrots, peeled and grated

2 tablespoons olive oil

1 cup plain Greek yogurt

2 cloves garlic, minced

Salt, to taste

A few black olives, for garnish

Fresh parsley or dill, for decoration (optional)

Instructions:

Bring a pot of water to a gentle boil and add the peeled carrots. Cook for about 5 minutes, just until slightly tender but not soft. Drain and let cool.
In a large bowl, combine grated carrots, olive oil, yogurt, garlic, and salt. Mix well until creamy and evenly coated.
Spoon the salad into a serving bowl. Top with a few black olives and fresh herbs if desired.
Serve chilled or at room temperature.
